This Pea & Ham Soup is quite a thick soup so it is delicious and filling on a cold winter’s day.
1.5 cups dried peas
1 large bacon hock (skin removed)
1 onion chopped
Handful of mint leaves
Salt and pepper to taste
4 cups chicken stock
Soak the peas overnight in cold water then drain and rinse. Add all the ingredients into a slow cooker and cook on low for 8 hours. Remove the bacon hock and take off all the meat and chop then add back into the soup.
If you want a thinner Pea & Ham soup add more stock. Enjoy!
