Black quinoa and chicken salad

This is a quick and easy black quinoa and chicken salad that’s perfect for the warmer days we are now experiencing.

Black Quinoa and Chicken Salad


1 cup black quinoa cooked

Handful of spinach leaves chopped roughly

4 chicken thighs steamed and roughly chopped

Juice of 1 lime

2 tablespoons extra virgin olive oil

1 preserved lemon finely chopped

Salt and pepper to taste

6 spring onions finely chopped



Cook the quinoa according to the cooking instructions (I tend to leave mine a little crunchy) and steam/grill your chicken thighs then add all the ingredients together and serve for the perfect black quinoa and chicken salad.
