Spelt Risotto

If you love Risotto but want something a little healthier try this Spelt Risotto for a nice change.

Serves 4


250g Spelt grains

2 tablespoons olive oil

2 onions chopped

50g dried apricots chopped

50g sultanas

1 orange zest and juice

40g raw cashew nuts

20g pine nuts

2 cups vegetable stock

Salt and pepper to taste

1 tablespoon coriander chopped

1 tablespoon parsley chopped



Put the spelt grains in a saucepan and cover with water, bring to the boil then simmer for 15 minutes.  Meanwhile pre-heat the oven to 180 ͦC and fry the onion in a frying pan until softened.

Add the spelt grains and onions to all the other ingredients and put in a greased baking dish and cover with the stock then cover and place in the oven for 30 minutes.  Take the risotto out and stir adding more stock if needed then cover again and bake for another 30 minutes before serving.

Serve this Spelt Risotto with a delicious green salad for a healthy dinner.
