Passionfruit & Lime Cheesecake

Serves 8 – 12 people (depending on your serving sizes)

Ingredients

 

Crust

1.5 cups mixed raw nuts

2 pinches salt

1 teaspoon vanilla extract

½ cup dates pitted

 

Filling

3 cups raw cashews

¾ cup lemon juice

¼ cup lime juice

½ teaspoon lemon zest

1 teaspoon lime zest

5 passionfruits

1 teaspoon agar agar powder

½ cup coconut oil

½ cup raw honey

½ cup almond milk

Pinch of salt

 

Method 

Crust

Place the nuts and salt into a food processor and blend until roughly chopped.  Slowly feed in the dates and vanilla extract and process until all finely chopped and blended together.  Firmly press the crust into a spring form cake tin and set to one side

Filling

Place all the ingredients into a high speed blender (except for the passionfruit and 1 teaspoon of lime zest) and blend until smooth.  Pour over the base and then top with the passionfruit and lime zest then either leave in the fridge overnight or for a few hours in the freezer to set
